Bistro 44 Chef to Compete in Great American Seafood Cook-off

On Monday, August 2, the front of Bistro 44 was the setting for the final practice for the 2010 Great American Seafood Cook-Off to be held in New Orleans, LA on August 7th.

Chefs from 15 states will compete this weekend for the title. New Jersey will be represented by Executive Chef, Peter Fishback of the Gourmet Dining Services at the New Jersey Institute of Technology, and Eric Witherspool, Owner and Executive Chef of Downtown Toms River's own Bistro 44. For this Cook-off, Peter will be the Executive Chef and Eric will be his sous-chef.

On Bistro 44’s sidewalk, next to a prep table and several burners, a table was set for twelve judges.  Just as in the final competition, the Chefs had one hour to prepare, cook, create presentation on plates, and serve the final dish for judging. 

The name of the dish that they have created is Jersey Shore.  They are pleased that all the seafood and 97% of the veggies are from New Jersey.  The scallops are from the Viking Village, Mays Landing, the lobster from the Pt. Pleasant Lobster Co., and the sea bass from Cape May.

Last year New Jersey came in 2nd, but this year they are going for the title King of Seafood!
